Lovey’s Mango Grapefruit Amuseable Rainbow Shortcake was inspired by the refreshing flavours of mango pomelo sago, reimagined in our soft chiffon cake style.

Instead of creating a heavy dessert, we wanted to capture the feeling of mango pomelo sago: fresh mango, bright citrus, creamy texture and a playful finish. That idea became a colourful seasonal shortcake made with soft chiffon sponge, mango Chantilly cream, fresh ripe mango, juicy grapefruit and colourful jelly balls.
